Borscht Recipe

Ingredients:

Heat a large pot over medium heat. Add a tablespoon of oil.

Sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.

Add grated beets, carrots, and diced potatoes to the pot. Cook for about 5 minutes, stirring occasionally.

Stir in the shredded cabbage and tomato paste. Cook for an additional 5 minutes.

Pour in the beef or vegetable broth. Add the bay leaf, dried dill, and thyme. Season with salt and pepper to taste.

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 30-40 minutes, or until the vegetables are tender.

Once the vegetables are cooked through, taste the borscht and adjust the seasoning if needed.

Remove the bay leaf from the pot.

Serve the borscht hot, garnished with a dollop of sour cream and a sprinkle of fresh dill, if desired.
