Classic New York Style Cheesecake Recipe:


Ingredients:


    For the Crust:

      1 1/2 cups of graham cracker crumbs1/4 cup of granulated sugar1/2 cup of unsalted butter, melted

    For the Filling:

      4 (8 oz) packages of cream cheese, softened1 1/4 cups of granulated sugar4 large eggs2 teaspoons of vanilla extract1 cup of sour cream

    For the Topping (Optional):

      Fresh berries or fruit compoteWhipped cream

Instructions:


    Preheat the Oven:
    Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan with butter or non-stick cooking spray.


    Prepare the Crust:
    In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated with butter. Press the mixture firmly into the bottom of the prepared springform pan, forming an even layer. Use the bottom of a glass or measuring cup to help press the crumbs down firmly. Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool while preparing the filling.


    Prepare the Filling:
    In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy, using an electric mixer on medium speed. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until well combined and smooth.


    Assemble and Bake:
    Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula to create an even surface. Tap the pan gently on the counter to release any air bubbles. Place the pan in the preheated oven and bake for 50-60 minutes, or until the edges are set but the center is slightly jiggly.


    Cool and Chill:
    Once baked, turn off the oven and crack the oven door open slightly. Allow the cheesecake to cool in the oven for about an hour. Then, remove it from the oven and let it cool completely at room temperature. Once cooled, cover the cheesecake with plastic wrap and refrigerate for at least 4 hours or overnight to chill and set.


    Serve:
    Before serving, carefully remove the sides of the springform pan. If desired, top the cheesecake with fresh berries or fruit compote, and a dollop of whipped cream. Slice and serve chilled.
