Title: Creamy Mushroom Risotto

Ingredients:

Prepare the Broth: Heat the chicken or vegetable broth in a saucepan over medium heat until it simmers. Reduce the heat to low to keep it warm while you prepare the risotto.

Sauté the Aromatics: In a large skillet or saucepan, heat the olive oil and butter over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent and fragrant, about 3-4 minutes.

Cook the Mushrooms: Add the sliced mushrooms to the skillet with the onions and garlic. Cook until the mushrooms are tender and browned, about 5-6 minutes. Season with salt and pepper to taste.

Toast the Rice: Add the Arborio rice to the skillet with the mushrooms, onions, and garlic. Stir to coat the rice with the oil and butter, and toast for 1-2 minutes until the edges of the rice grains become translucent.

Deglaze with Wine: Pour the dry white wine into the skillet with the rice and mushrooms. Stir continuously until the wine is absorbed by the rice, about 2-3 minutes.

Add the Broth: Begin adding the warm broth to the skillet, one ladleful at a time, stirring continuously. Allow each addition of broth to be absorbed by the rice before adding more. Continue this process until the rice is creamy and cooked to al dente texture, about 18-20 minutes in total.

Finish with Cheese: Once the rice is cooked to your desired consistency, remove the skillet from the heat. Stir in the grated Parmesan cheese until melted and creamy. Taste and adjust seasoning with salt and pepper if needed.

Serve: Transfer the creamy mushroom risotto to serving plates or bowls. Garnish with freshly chopped parsley if desired. Serve hot and enjoy!
